Jeez how did I end up here? part1
It all began in Kuala Lumpur airport in June of 1994.I had spent the past two weeks in Bangkok working in the Delta Pacific hotel as it was then known upgrading my skills as a Thai chef.On the return flight whilst in transit in Malaysia I noticed an orange haired gentleman who I knew just had to be Irish.
He introduced himself as Patrick Coyle the owner of a large recruitment agency in the city and after a few minutes chatting we had conjured up a business plan.
This was the era of no staff in Ireland as almost all my everybody had crossed the pond to the UK or taken the big plunge and had left Ireland via Shannon airport for the gold paved streets of New York or Boston.I had been working around the clock as head chef in Taste of Thailand and we found it almost impossible to get staff.
Over that cup of coffee it was agreed that Patrick would recruit and interview staff in his office in Kuala Lumpur and this Patrick would place these people in the catering industry in Ireland.
I boarded my flight full of the joys of spring.It looked like I would finally get some time off
