People will always need lamb chops
I have practically stopped buying newspapers,the rehashing of bad news after bad new plus the pontificating from them is a joke, have they all forget their twice weekly property supplements, it really does feel like the 80′s are here again.
I was chatting with a friend this morning and he thought it might be a blast to tell you about my 80′s
Secondary school was Deerpark in Turners Cross, my secondary school job was a butcher boy in the English Market, I spent 3 years of Wednesdays afternoons and Saturdays scrubbing butcher blocks and doing deliveries on my bike, it seems like the early 1900′s but it was only 1978-1981.
I remember the boss used to always say “People will always need lamb chops” and that mince beef was 36p a lb.
After a pretty good exam results I was informed that “I was going to be a butcher and that there were no jobs around and a trade would be good for me” well, you can imagine my excitement ![]()
So I am a qualified butcher ( and chef but thats another story ), which is really quite bizarre and I don’t think I have told anyone that before on this blog before.
So in the midst of all the doom and gloom yesterday my old boss Willie Beechinor’s saying “People will always need lamb chops” popped into my head.





I’m not a qualified butcher, but I did a fair amount of butchery training on the way to becoming a qualified chef.
I was surprised to find that I really enjoyed it, and had a natural aptitude. Never in a million years would I have predicted that breaking down a whole pig to prime cuts could be so much fun.
Perhaps I could be an assistant in your imagined butcher shop!
Great saying… Went to Deerpark too twas tradition all the Kearney boys went so ur going too… cant complain was an excellent school with honest teachers who took no shite

Funny how the Catholic Church doesn’t want us eating lamb chops today but we’re still allowed to buy them…
I have a friend who is now an experienced IT trainer who went down a similar path. The thing is though – ever since training as a butcher he won’t eat beef. I’m scared to ask.
